From the brief smattering of ‘41 Poncho pictures that come up in an image search, it looks like red was quite popular. Which is very nice in color.
Also seen, brown, metallic green, several nice shades of blue, and... not white per se , but a lovely cream:

Yep. Even Model As had green as a very popular option.
